Chicken Tikka Masala is one of my favorite dishes to make on the grill and stove. The nuances of the marinade and the sauce make this dish so unique, and I’m a complete fool for anything that gets flavor from charcoal or wood smoke. Often served over rice, we sometimes choose to serve this dish very hot over spinach. The heat of the chicken and sauce wilt the greens and make a wonderfully nutritious alternative to rice.
